just purchased a new iMac. What is the easiest way to move my logbook over from my HP laptop to the iMac?

Logbook Pro Desktop requires Windows. You can easily run Windows on a Mac with Parallels Desktop or VMWare Fusion, I believe Fusion is now free for personal licenses. Install Windows into either of those and Logbook Pro into Windows and refer to the links below:
