DUAL vs INSTRUCTOR vs EVALUATOR

I am not the most seasoned veteran pilot. I know when I received DUAL instruction, I assume the Instructor category is for CFIs giving dual instruction, but what is the EVALUATOR column for?

Evaluator is another name for Flight Examiner, like those that give you your Private Pilot certification.
